
Nutty Broccoli Bites
Makes about 16 pieces
Ingredients:
1 Tbsp. extra virgin olive oil
¼ c white onion, chopped
3 Tbsp minced garlic
1 pkg. of 10 ounces chopped, frozen broccoli
3/4 c bread crumbs
¼ c pecans, chopped
1/4 c Pecorino Romano, finely grated
1/4 c parmesan, finely grated
½ tsp. dried oregano
½ tsp parsley
¼ tsp salt
¼ tsp pepper
2 eggs, lightly beaten

Method:
1. Preheat oven to 400 °F. Sauté onions and garlic in olive oil.
2. Cook broccoli according to package directions; squeeze out excess water. Cool slightly.
3. Combine with remaining ingredients.
4. Form into 1 1/2 inch balls. Place on a baking sheet lined with lightly greased parchment paper or Silpat.
5. Bake for 25 to 30 minutes, or until brown.
Serve with your favorite dipping sauce.
